Instant Pot Vegetable and Lentil Stew with Atlantic Dulse Flakes

Ingredients:

  • 1 cup dried lentils
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 fresh tomatoes, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup Atlantic Dulse flakes

    Instructions:

    1. Rinse the lentils under cold water and drain.
    2. Set the Instant Pot to "Sauté" mode and add a drizzle of oil. Sauté the onions, carrots, celery, and garlic until softened.
    3. Add the lentils, fresh tomatoes, vegetable broth, cumin, paprika, dried thyme, salt, and pepper to the Instant Pot. Stir well to combine.
    4. Close the lid of the Instant Pot and set the valve to the "Sealing" position.
    5. Cook on high pressure for 10 minutes. Once the cooking time is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick release to release any remaining pressure.
    6. Open the Instant Pot and stir in the Atlantic Dulse flakes. Let the stew sit for a few minutes to allow the dulse flakes to soften and enhance the flavors.
    7. Serve the stew hot and enjoy!
