Blueberry-Balsamic Glazed Rosemary Chicken Recipe

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

    For the Blueberry Sauce:

    • 1 cup fresh or frozen blueberries
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons honey
    • 1 teaspoon Dijon mustard
    • 1/2 teaspoon minced garlic
    • Salt and pepper to taste

      Instructions:

      1. Season the chicken breasts with salt and pepper on both sides.
      2. Heat the olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for about 6-8 minutes per side, or until cooked through and browned. Remove the chicken from the skillet and set aside.
      3. In the same skillet, add the blueberries, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper. Stir well to combine.
      4. Reduce the heat to medium and let the blueberry sauce simmer for about 5 minutes, or until the blueberries have softened and the sauce has thickened slightly. Stir occasionally to prevent sticking.
      5. Return the cooked chicken breasts to the skillet and coat them with the blueberry sauce. Cook for an additional 2-3 minutes, or until the chicken is heated through and well coated with the sauce.
      6. Remove the chicken from the skillet and transfer to a serving platter. Spoon some of the blueberry sauce over the chicken breasts.
      7. Serve the chicken with the remaining blueberry sauce on the side. You can garnish with fresh blueberries or herbs, if desired.
